Chicken Noodle Soup To Win At Prepping

There’s nothing like a good, hearty soup to warm you up in the winter. Try this tasty bowl of goodness and let me know what you think

Ingredients List [to make 2]:

900ml Chicken Stock

175g skinless Chicken Breast

1 tsp Root Ginger, chopped

1 Garlic Clove, chopped

50g Wheat Noodles

2 tbsp frozen Sweetcorn

2-3 Mushrooms, thinly sliced

2 Spring Onions, sliced

2 tsp Soy Sauce

Method

1. Pour the stock into a saucepan & add the chicken, ginger, garlic. Bring to the boil, then reduce the heat, partly cover & simmer for 20 mins, until the chicken is tender.

2. Remove the chicken to a chopping board & shred using a couple of forks.

3. Return the chicken to the stock with the noodles, corn, mushrooms, half the spring onions & the soy sauce. Simmer for 3-4 mins until the noodles are tender.

4. Ladle into two bowls & scatter over the remaining spring onions.
